Give or take the fact that it said after thousands of years peace 
reigned and humans were ready to join the Vell-os in their ending, or 
that after many years peace ruled etc... NONE of the endings (I've seen) 
said - WHAM! Peace rules. It just implies you are instrumental in 
bringing a golden age. Also EVN is the 3rd game... it's not as if there 
hasn't been expansion before.

This isn't cannon, so who cares. Look at it as an alternate universe if 
you want. The point is more fun.

Let's not even get into comics or franchise series... there is always an 
excuse for more.
